Welcome to my 6th monthly update, all about what I’ve been up to on Charlotte’s Lively Kitchen in December.

I’ll also talk about my aims for February.
Whenever I start thinking about cooking something new I think about all of my family’s favourite foods and work out which ones I haven’t cooked before. Then I start experimenting.
Whenever we order Chinese takeaway my husband will always, always order a chicken chow mein, so this seemed like an obvious choice to start experimenting with.
I have a confession. When it comes to breakfast, I’m a little bit lazy. Most of the time I eat Cheerios with the occasional switch to toast with honey.
However, occasionally I like to make a little bit more of an effort and whip up a full(ish) english or these yummy american pancakes.
What’s not to love about this chilli con carne, it tastes delicious, it’s cheap and simple to make, it’s one of your five-a-day, it freezes so you can make a big batch and save some for another day, and best of all it’s only 181 calories so I can have an ice cream for pudding without feeling guilty.

It’s been a while since my first attempt at pancake art, my little Christmas reindeer, so I thought it was about time I had another go. Whilst a pancake that looks like something else is fun, what’s even more important is that it tastes good. So, I thought I’d share with you my simple recipe for perfect american pancakes (don’t worry if you’re not in an artistic mood, these taste just as good as simple round pancakes too).

I love making special birthday cakes for my family and usually I’m quite mean and don’t let the boys help. However, there are occassions where their cake decorating skills take centre stage and one of those days is Daddy’s birthday.
In my house, an important part of getting into the Christmas spirit is watching Christmas films. To celebrate the start of the Christmas film season, traditionally the Friday before Christmas (it is a real thing, I haven’t just made it up – honest), I thought I’d share with you my recipe for festive spiced orange popcorn.

I’m sure that for most of you, this will include brussels sprouts – love them or hate them, Christmas dinner wouldn’t be the same without them.
