Easy Chocolate Cupcakes

As promised, here’s the recipe for my yummy chocolate cupcakes, all ready for the creation of my build-your-own cupcakes index which I’ve been busy working on and will be sharing with you soon. The idea is to have all of my cupcakes and buttercream recipes in one place so you can mix and match (with maybe a hidden centre in the middle too 🙂 ). The index is also going to have a round up of all of my fancier cupcake creations, such as raspberry trifle, white russian or millionaires’ shortbread as well…

Easy Vanilla Cupcakes

I mentioned when I shared my recipe for caramel cupcakes a couple of weeks ago that I’m working on creating a mix-and-match cupcake index with all my sponges, buttercreams and fillings in one place so you can create your own cupcakes using any combination you can think of. However, when I made a start on it I realised that two of my go-to cupcakes recipes (vanilla and chocolate) didn’t exist on here in cupcake form (they’re only on here as larger birthday cake recipes). Whilst it’s really easy to convert these particular recipes from large cakes, to save you the trouble of working out what to adjust I decided that I’d publish them as cupcakes too…

Caramel Cupcakes

A few days ago I shared my recipe for caramel buttercream (which you seemed to love), and what better to go with caramel buttercream than a delicious caramel cupcake.

As with all of my basic cupcake recipes I’ve tried to keep them as easy to make as it humanly possible (stick it in a bowl and mix it up – it really is as simple as that) and also to make sure that the caramel flavour really comes through…

Christmas seems to be coming up very fast now (far too fast, I’ve still got so many Christmas recipe ideas and no time to share them all!). I’m pleased to say that I’ve finally finished my Christmas shopping which is a huge relief. Thank goodness for next-day delivery otherwise I’d have a few empty-handed relatives on Christmas morning…

As you know I am a bit of a fan of social media, I spend (probably a little bit too) much of my day browsing my Instagram, Facebook and Twitter. So I was very excited to discover a new social network and, even better, one dedicated to one of my absolute favourite things – baking…

Millionaires’ Cupcakes

Today is the last day of National Cupcake Week (19th-25th September 2016) so there’s just time for me to share my recipe for Millionaires’ Cupcakes before it’s all over. One thing I love about creating cupcake recipes above pretty much all others is the possibilities it offers, cupcakes are just perfect for taking one idea and twisting it into cake form. I’ve done it a few times before with my White Russian Cupcakes and my Caramel Macchiato Cupcakes (which by the way use the same caramel sauce as this recipe so if you have any leftover you should give those a try…

Easy Nutella Cupcakes

Following on from my Nutella buttercream, here’s my recipe for those Nutella cupcakes that the buttercream was piped all over the top of…

This recipe is born out of the fact that I can’t resist a bit of a recipe challenge. A couple of month’s ago was world Nutella day and Ros from The More Than Occasional Baker shared her recipe for 3-ingredient Nutella brownies in my Food Year Linkup. The idea behind the brownies is that due to the fat and sugar content of Nutella it could be used as a substitute for both the butter and sugar in the brownie recipe. It got me wondering whether the same principle would hold true for cupcakes too.

Easter Nest Cupcakes

Last week we had a St Patrick’s Day/Easter bingo morning to raise funds for the PTFA at Daniel’s school. At the last minute I was asked to make something for the children and decided on cupcakes as they’re so quick and simple and always seem to go down well. I wanted to make something simple but with a bit of an Easter theme and created these Easter Nest Cupcakes. They proved popular with the children (I think there’s something very tempting about mini eggs stuck to a cake!) so I thought I’d share how to make them here.

I’ve tweaked the design a little from that first batch, with smaller cakes, lighter coloured icing, and the addition of little flowers (in my experience almost any decorated cake can be made prettier with a few little flowers added to it!). They’re really simple so great to make with little ones, and to show you just how simple they are (and how much fun you can have making them) I got Josh (my 3-year-old) to join me in the kitchen to make this little video tutorial…

White Russian Cupcakes

White Russian Cupcakes inspired by the classic cocktail – Baileys whipped cream sponge, topped with a White Russian buttercream and a hidden dark chocolate and vodka ganache centre. I love creamy cocktails and the White Russian is one of my absolute favourites (really anything with Baileys is a winner in my eyes), so when I was contacted by thebar.com a few weeks ago and invited to create a recipe based on one of their cocktails, it was the obvious choice. If you’re unfamiliar with the White Russian, it’s made from a mix of Baileys Coffee, Vodka and Cream, topped with…

Fairy Cakes (From my boys for my birthday)

fairy cakes

Today is my birthday and so the boys decided that they wanted to make me a cake (I know I probably shouldn’t be posting recipes on my birthday, but we celebrated yesterday so I think it’s OK!). After some discussion they decided that it would be most fun to make a selection of cupcakes.

They’re all made from a simple all-in-one vanilla sponge (recipe below) to which they added either chocolate chips, sultanas or kept them plain. They then made butter icing, glacé icing and melted milk chocolate and finished them off with a selection of different sprinkles.
