Hidden Hearts Cupcakes

With Mother’s Day fast approaching I’ve been challenged by We Bake to create something perfect for making with kids and what is more perfect that cupcakes covered in hearts with a secret heart inside.

These cupcakes are great for baking with little ones as they combine all the things my boys love about cooking… The cake mixture is really simple – put it all in a bowl and mix, you get to use cutters, you get to use food colour and best of all you get to use as many sprinkles as you possibly can to decorate the top.

Easy Vanilla Cupcakes


I mentioned when I shared my recipe for caramel cupcakes a couple of weeks ago that I’m working on creating a mix-and-match cupcake index with all my sponges, buttercreams and fillings in one place so you can create your own cupcakes using any combination you can think of. This recipe is born out of the fact that I can’t resist a bit of a recipe challenge. A couple of month’s ago was world Nutella day and Ros from The More Than Occasional Baker shared her recipe for 3-ingredient Nutella brownies in my Food Year Linkup. The idea behind the brownies is that due to the fat and sugar content of Nutella it could be used as a substitute for both the butter and sugar in the brownie recipe. It got me wondering whether the same principle would hold true for cupcakes too.

Easter Nest Cupcakes


Last week we had a St Patrick’s Day/Easter bingo morning to raise funds for the PTFA at Daniel’s school. At the last minute I was asked to make something for the children and decided on cupcakes as they’re so quick and simple and always seem to go down well. I wanted to make something simple but with a bit of an Easter theme and created these Easter Nest Cupcakes. They proved popular with the children (I think there’s something very tempting about mini eggs stuck to a cake!) so I thought I’d share how to make them here.

I’ve tweaked the design a little from that first batch, with smaller cakes, lighter coloured icing, and the addition of little flowers (in my experience almost any decorated cake can be made prettier with a few little flowers added to it!). They’re really simple so great to make with little ones, and to show you just how simple they are (and how much fun you can have making them) I got Josh (my 3-year-old) to join me in the kitchen to make this little video tutorial…
