One of my all-time favourite cakes is coffee and walnut. If I spot it in the cake cabinet in a cafe it takes a serious amount of willpower not to sneak it onto my tray. Over the weekend I shared my chocolate birthday cake recipe and what chocolate cake is complete without a decent dollop of chocolate buttercream all over it? As soon as the chocolate cake recipe was perfected I got straight to work on creating the buttercream to go with it. For some strange and unknown reason I decided to leave sorting out the buttercream until I’d got the cake recipe nailed down, which meant baking even more cakes to test each buttercream with (OK I probably could have tasted the buttercreams without the cake and narrowed it down to a few favourites – but where’s the fun in that!).
I mentioned a couple of weeks ago that I was going to share my recipe for Nutella cupcakes and if you follow me on… well any social media really, you will have noticed that last week I decided my willpower was strong enough to not eat all of them if I made them.
It turns out I was wrong, I don’t have nearly enough willpower and simply couldn’t resist giving them a try. But, it you’re going to crack and eat something a bit naughty, I’d suggest that Nutella cupcakes are definitely the way to go 🙂
I was going to dive straight into posting the recipe for those cupcakes but then I decided that the buttercream deserved a post all to itself. Yes, it’s the perfect Nutella-y topping for the cupcakes, but it’s also yummy in it’s own right and it would make a brilliant topping to all sorts of other flavours of cupcakes, birthday cakes, layer cakes or anywhere else you might want use a bit of buttercream.
I’ve been meaning to add a buttercream recipe to my blog for ages and just haven’t quite gotten around to it. I think part of my reluctance to post was that I’m not the best at piping and so had no idea how to present it to show off it’s yummy deliciousness.
However, a couple of day’s ago I came across this 3-second buttercream rose tutorial by Toni at Gym Bunny Mummy. She made it look so simple that I couldn’t resist whipping up some vanilla cupcakes and a batch of buttercream to give it a try.
