Coconut, Banana & Chocolate Breakfast Smoothie

This coconut, banana & chocolate breakfast smoothie is a delicious and healthy way to start the day and the addition of oats will keep you filled up until lunchtime.

We had a new addition to my family just before Christmas when I bought myself an early Christmas present of a Vitamix blender. I know some people get excited about new cars or the return of their favourite TV series but I’m a different and I get most excited by new bits of kitchen (or photography) equipment to play with.

That said, I think I’m a bit strange when it comes to new things. I was so excited when it arrived that I couldn’t bring myself to open the box for a week and it took a few days after I finally unpacked it that I actually tried it out! I’m not really sure why I waited – fear that it wouldn’t live up to my expectations (fortunately so far it has 🙂 ), knowing that once it’s opened I wouldn’t be looking forward to it any more, wanting to make sure that I had the time to try it out properly rather than rushing my first go… who knows. What about you, do you rip open parcels as soon as you get them or wait? Please tell me I’m not alone in this.

The addition of oats makes it nice and filling and because it uses coconut milk it’s vegan and dairy free. Also the fact it contains a whole banana means that you start the day with one of your five-a-day.

You don’t actually need a really fancy blender to make this, I’ve made similar smoothies with my 20-year-old stick blender in the past, but you may find that it’s not quite as smooth, especially the oats – still delicious though!

INGREDIENTS

Metric - US Cups/Ounces
  • 1 banana
  • 250 ml coconut milk
  • 1 heaped tsp cocoa powder
  • 1 heaped tbsp oats
  • 1-2 drops vanilla extract

INSTRUCTIONS

  • Put everything into the blender (1 banana, 250ml coconut milk, 1 heaped tsp cocoa powder, 1 heaped tbsp oats and 1-2 drops vanilla extract) and blitz until smooth.

    Can you use cacao powder instead of coco ? And if so .. how much cacao should I use ?

      Raw cacao may be more bitter than cocoa powder although the cocoa powder I use is unsweetened. The best thing to do is to try it and see if it is to your taste. I would start with a straight swap and then you can adjust it to your taste. You could try this with a small batch if you are concerned about wasting any ingredients.

    I made 2 of these smoothies for myself and my 21 yo daughter but I doubled the cocoa, added an extra tsp of oats and sprinkled cinnamon. I also added 1-2 cups of crushed ice. They were delicious!

    I’ve never tried coconut milk in a smoothie before, I usually use almond milk but this looks so tasty! I love your photography as well 🙂

      I’ve never tried it but I’d imagine that the banana would go a bit funny, personally I wouldn’t do it.

      I’ve not tried it with coconut milk but I can’t see why not. The only thing I’d say is that coconut is one of the key flavours of the smoothie so I’m not sure how good it would taste.

      I pretty much always add oats to my breakfast smoothies as I find they’re much more filling. I need to find some other filling alternatives to add a bit of variety.

    You’re not alone! I get really excited about ordering a new ‘toy’, anticipate its arrival and then it takes me ages to try it…… I am sure there is an anxiety or fear of something in there, but I am not sure what!
    But looks like you’ve got into the swing with the Vitamix. Absolutely my sort of smoothie…… and a perfect fill you up all morning breakfast….. Adore the photos and styling too!

      I think it’s a fear that I really want to love it and if I switch it on I’ll suddenly find that I don’t. I had that with a food processor once, I hated it from pretty much the first time I used it and it never got back in my good books. No problem so far with my Vitamix thankfully, I still love it!

    I like to covet kitchen appliances for ages (sometimes years) before I finally purchase them – it’s part of the pleasure for me. I did it with both my kitchen Aid and Bamix. Now I’m thinking I need a Vitamix too! This smoothie looks delicious – the photos are amazing x

    Sweetie, your photos are stunning!!! I am exactly the same as you with new things. It took me 3 weeks before I took my Vitamix out of the box! I’m sure you’re happy you’ve got it now though! Xxx

      Glad it’s not just me! I love it, although I still find the noise slightly terrifying – I go and hide in the other room when it’s on!
