Mediterranean Lamb Stuffed Tomatoes

Three Mediterranean Lamb Stuffed Tomatoes on a serving board.

I’m back with another recipe as part of my collaboration with Tasty Easy Lamb – Mediterranean Lamb Stuffed Tomatoes.

I wanted to create a recipe perfect for anyone that’s sticking to their healthy eating resolutions but is in need of something a little different to keep on track. These stuffed tomatoes are filled with a delicious lamb mince, packed with Mediterranean flavours including olives, lemon and oregano. I’ve also drifted into the Middle East and used a little sumac as it’s a flavour I absolutely love. However, don’t worry if it’s not something you have in your spice drawer (or wherever you keep your spices) as this recipe is still delicious without it.

Spaghetti Carbonara with Grana Padano & Prosciutto di San Daniele

Sponsored by Prosciutto di San Daniele and Grana Padano.

I’m really excited to be back with another recipe using some delicious Grana Padano cheese and Prosciutto di San Daniele. They really are such amazing ingredients to work with and so versatile in terms of the range of what you can do with them.

Today’s recipe is my take on a classic spaghetti carbonara, where I’ve switched in plenty of Grana Padano cheese and topped it with some fresh Prosciutto di San Daniele. By adding the Prosciutto di San Daniele just before serving it maintains its delicious soft, melt-in-the-mouth texture and it means it can be enjoyed just as it was intended when it was made…

Festive Roast Leg of Lamb

Today I’m sharing the first of two festive recipes I’ve created as part of my collaboration with Tasty Easy Lamb, a Festive Roast Leg of Lamb. It’s flavoured with rosemary, cloves, orange and cranberries and it makes a fantastic alternative to turkey on Christmas Day or as an amazing centrepiece to a roast dinner over the festive period.

If you happen to have any leftovers then it also tastes delicious cold in a sandwich or served with some bubble and squeak…

Lamb Hotpot

Sponsored by Tasty Easy Lamb.

When the weather gets chilly I’m all about the comfort food, so I thought I’d create something for you that I consider one of the ultimate comfort foods – Lamb hotpot. It’s got melt-in-the-mouth lamb and vegetables and it’s then topped with sliced potatoes which are brushed with a little butter to get them soft underneath and crispy on top. It really is like a hug in food form and just what we all need on the wintery days we have to come.

It’s really easy to prepare, a bit of peeling and chopping and that’s about it. It only takes about 15 minutes of actual effort before popping it into the oven to slow cook ready for dinner.

One-Tray Fish and Chips for the RNLI Fish Supper

Sponsored by Crisp ‘n Dry.

This weekend (13th-15th October 2017) the Royal National Lifeboat Institution (RNLI) are celebrating their annual fish supper. It’s a fundraising event where they encourage us all to host our own fish supper with friends and family and donate to support the charity’s lifesaving work.

Crisp ‘n Dry is proud to support the RNLI Fish Supper and they’ve challenged me to create a recipe perfect for hosting your own. I think my one-tray fish and chips really fit the bill. The fish is in a crispy breadcrumb coating flavoured with lemon zest. The chips are the closest I could create to chip shop chips in the oven, soft in the middle with crispy bits on the outside and the Crisp ‘n Dry adds a really lovely flavour…

Thai Green Chicken Curry

Sponsored by Very Lazy.

One recipe that Jon has been nagging me to perfect for ages is Thai Green Chicken Curry. Usually when he requests something new for dinner I jump at the chance to get creating, but Thai Green Curry always seemed like a bit of a faff so I put it off again and again. That was until a few weeks ago when I was asked to create a recipe using ingredients from Very Lazy…

Crispy Pork Medallions (and Three Delicious Ways to Serve Them)

Pork Medallions

Sponsored by Love Pork.

We eat pork regularly in my house, but it’s mostly in the form of mince, sausages or maybe the occasional pork chop. When I was challenged to come up with a delicious family-friendly recipe using pork medallions I was keen to take up the challenge to try something a bit different.

I discovered that pork medallions are a great base to a family meal… the meat is lovely and tender, they cook quickly (which is great when I’ve got hungry boys to feed) and they’re low in fat too…
