American Pancakes (Quick, Easy and Really Delicious)

Fluffy, light american pancakes. Quick and easy to make and they taste delicious.

I have a confession. When it comes to breakfast, I’m a little bit lazy. Most of the time I eat Cheerios with the occasional switch to toast with honey.

However, occasionally I like to make a little bit more of an effort and whip up a full(ish) English or this easy pancake recipe.

Maple syrup being poured onto a stack of American pancakes and running all over the plate.The advantage of the pancakes is that they are much lighter than a cooked breakfast (which serves more as brunch than breakfast) and they’re really quick to make, ready in just 10 minutes. They’re also made with ingredients I usually have in the house so I can decide to make them on a whim. I love them served with fresh fruit and drizzled with maple syrup.

Recommended Equipment

To make these american pancakes, you’ll need the following equipment

A large bowl, weighing scales, a measuring jug, a whisk and a frying pan.

American Pancakes

Fluffy, light american pancakes. Quick and easy to make and they taste delicious.

INGREDIENTS

Metric - US Cups/Ounces
  • 200 g Self Raising Flour
  • 50 g Caster Sugar
  • 250 ml Milk - I use skimmed but any is fine
  • 2 Eggs

RECIPE VIDEO

INSTRUCTIONS

  • Sift the self raising flour (200g) into a large bowl.
  • Add the caster sugar (50g).
  • In a separate bowl, beat the eggs (2 eggs).
  • Add the eggs and milk (250ml) into the flour and sugar and whisk until you have a smooth batter.
  • Heat a large frying pan to a medium heat and add the pancake mix.
  • Cook until bubbles are starting to form on the top and then flip and cook for another minute until the pancakes are golden brown.

NOTES

I don’t grease the pan as I use a non-stick pan and so it isn’t necessary. However you may wish to use a little butter or vegetable oil to stop the pancake sticking.
These pancakes are suitable for freezing. Place them in an airtight container (or wrapped in clingfilm) with each pancake separated by a piece of greaseproof paper. When you want to eat them simply warm them (from frozen) in a toaster on a low setting.

    Easter Sunday and the shops are shut…and someone has eaten all the croissants! A quick search for easy breakfast recipes unearthed this one (which looked the quickest and easiest!). Absolutely fab – thank you! Houseful of guests very happy with impromptu pancakes, maple syrup, Greek yogurt and raspberry breakfast. Recommended +++

      The recipe serves 4. Depending on the size you make each pancake that will be 3-4 pancakes each.
